It is raining today, so I felt that title appropriate.
Last week I
made crockpotted this Balsamic Chicken and Sweet Potatoes. It was decent. The chicken looked weird. I don’t think it was submerged in enough liquid. Next time (and there will be a next time, so I guess it was more than decent) we will layer the chicken in between the taters, instead of on top of all of them. It was easy and different.
I also made this Creamy Avocado Pasta and we were shocked at how light and delicious it was. We didn’t have endive or chicken. Not sure about the endive, but I would recommend some shredded chicken. It could have used some kick. Also, don’t leave out the walnuts, or something else crunchy, the texture variations were boss. Our minds were racing with all the other sauces we could make with greek yogurt and _____. This comes highly recommended from 3 picky eaters.
Saving the best for last… I made this last night: Butternut Squash and Sage Quinoa, except I should say “slightly adapted” because we didn’t have sage so we ended up using Herbs de Provence. And we added fresh grated parm. (duh) It.was.awesome. Everyone was raving about it. I don’t usually cook quinoa in ckn stock, so I don’t think it needs that, especially since you get such great flavor from bnut squash and herbs de provence, but it was super tasty. We enjoyed this bad boy with kielbasa, green beans and a cucumber salad.
